Chocolate Banana Pancakes
We make a lot of pancakes and waffles at our house. I have a basic pancake recipe with limited ingredients for a quickish breakfast. I also have an amazing could be dessert pancake recipe that I make on special occasions or when I notice that brown banana that no one wants.
- Ingredients
- DRY
- 1 Cup Flour
- 3 Tablespoons Cocoa Powder
- 3 Tablespoons Sugar
- 1 1/4 teaspoons Baking Powder
- 1/2 teaspoon Baking Soda
- 1/2 teaspoon salt
- WET
- 1 RIPE Banana
- 1 teaspoon Sugar
- 1/4 teaspoon Banana Extract if desired
- pinch salt
- 1 Cup Buttermilk or Sour milk (1Tablespoon vinegar+ 1Cup of Whole milk, let sit five min)
- 1 Egg
- 1 teaspoon Vanilla Paste or Extract
- 1 Tablespoon Vegetable Oil
- Mix or sift all Dry ingredients together in a medium bowl, stirring well to combine. Once mixed thoroughly form a depression in the dry mixture.
- In a small bowl add peeled banana, teaspoon sugar, pinch of salt, and banana extract (if using) smash and blend with a fork till creamy.
- Add lightly scrambled egg and oil, stir to combine.
- Stir in Buttermilk/Sour milk and Vanilla.
- All at once stir Wet ingredients into Dry, mix till just combined, lumps are fine.
- Let sit while griddle or large flat pan heats. I use 375 on my griddle.
- I butter my griddle for pancakes, mmmmm.
- Once preheated pour 1/4 cup of batter per cake, wait till bubbles start to form and edges start to solidify, then flip with a pancake turner.
- Just a few minutes on the second side and remove to enjoy.
You can eat these pancakes like usual with syrup but we like them better with whipped cream and sliced strawberry’s!!!
